D’Argenzio Winery’s Urban Farm Produce

D’Argenzio Winery’s Urban Farm is in full swing! With the bountiful squash harvest we are currently receiving, it got us to thinking, what to do with all this fresh produce? Cook it into a tasty meal, of course! So we sat down the man himself, Raymond D’Argenzio, and asked him how he likes his squash.

“I like to prepare it one of two ways. First, I like to slice it thinly. Then spread some Extra Virgin Olive Oil across it with a simple salt and pepper base and either BBQ it or pan sear it till it is just soft enough to slice with a fork and serve with our 2012 Tocai Friulano. The second method is more of a dessert style squash. I take the globe squashes and slice the top off and hollow it out, just like a bread bowl for soup. I place the shell aside and take the interior I scooped out and place into a blender with a little bit of brown sugar, honey, and a squeeze of lemon and then puree. I then place the sugared puree back into the squash shell and bake at 350 degrees for approximately 30 minutes. Let cool and then enjoy with a glass of our desert wine, the D’Amerone.”
